Some French AOC Wines a Sham?

According to a French consumer group, roughly one in three of all wines marketed under France's regional appellation system do not deserve it. In France's wine classification system, wines from some 470 regions are recognised as an "appellation d'origine controlee" (AOC).
These appellations are supposed to ensure that regional wines follow strict standards, such as using grapes from specific areas or only using specific grape varieties. The AOCs are intended to be marks of quality and traditional wine-making. |

An article in The Capital Times of Madison, WI explores the difficulties of communicating about wine without a truly shared vocabulary. An example:
One of the biggest challenges facing wine drinkers is adequately describing the "texture" or "body" of the wine they enjoy. A wine that's medium-bodied will seem heavy to some drinkers, and light to others. For the sake of convenience, Dahl often equates the body of a specific wine with the way milk feels in the mouth.
"A light-bodied wine will feel like skim milk," she says, "while a medium-bodied wine feel more like two-percent. Wines with a heavier body are more like whole milk." |

Mmmm....Chicken Wine!

Okay, it's not really wine. But it really does have real chicken in it!
To make this Indian traditional "chicken wine," they take a dressed chicken, remove the legs and head, make a slit in the middle and empty out the liver, intestine and the stomach. Ghee and garam masala are stuffed into it before wrapping it a fine cloth. It is then brewed in a special container called Fonshi, which is otherwise used to brew Rakhsi, the local beverage.
Half the container is filled with Janr (millet beer) and tightly closed. The contraption is then heated by placing it on a wooden fire. The Janr evaporates and condenses once it hits the upper part of the Fonshi. The condensed liquid collects inside another vessel called Odhan. This distilled fermented liquid soaks in the chicken and more Janr is added. The chiken wine or Kukhra-ko-Rakshi is ready. |

Researchers in Spain have found that exposing grapes to ozone was 90% as effective as sulphur dioxide in preventing decay. This could benefit wine-drinkers who are allergic to the sulphites currently used for this purpose.
Ozone-treated grapes also contained up to four times more antioxidants, the team said in a peer-reviewed article in the Journal of the Science and Food of Agriculture. |
